The problem nobody tells you about your olive oil

Every time you open a jerrycan or a bottle, air gets in. And air oxidises the oil: it degrades the polyphenols, dulls the aromas and reduces the very properties that make it special. It's a silent process, but a real one. Your last drop never tastes the same as the first.

Where this oil comes from

Arraigo is born at the Olivar de San Miguel, on the lands of Puente Genil (Córdoba), where Migue's family — 4th generation olive growers — cultivates a blend of Hojiblanca, Picual and Picuda olives. The olives are hand-harvested from the tree, transported clean to the mill and turned into juice in under 24 hours, using only mechanical processes and at ambient temperature.

By leaving it unfiltered, Arraigo retains the natural olive particles in suspension. Those particles are what give it its deep green colour, its silky texture and a flavour you won't find in any industrial oil. Limited production: it takes over 6 kg of olives to yield a single litre (an extraction rate of 16–18%, compared to the usual 20–28%).

Yes, you can refill your oil dispenser directly from the tap. We recommend filling it in small amounts so the oil in the dispenser is refreshed regularly and always at its best.
